  • 4 pieces large pears (Bosc or Anjou)
  • 15 ml lemon juice
  • 67 g light brown sugar
  • 0.5 tsp cinnamon optional
  • 0.25 tsp nutmeg optional
  • 0.25 tsp kosher salt
  • 42 g unsalted butter cut into small pieces
  • 5 ml vanilla extract
  • 75 g chopped pistachios toasted or raw
  • 100 g vanilla ice cream optional
  • 100 g yogurt optional
  • 100 g whipped cream optional
  • 100 g extra nuts optional

Method
 

  1. Heat the oven to 400°F and prepare a baking dish.
  2. Peel pears if firm; slice and core them.
  3. Arrange pears cut side up and drizzle with lemon juice.
  4. Mix brown sugar, spices, and salt; sprinkle over pears.
  5. Add butter pieces and drizzle with vanilla.
  6. Bake for 30 minutes, turn pears cut side down, and spoon caramel over them.
  7. Continue baking for 25–45 minutes until tender.
  8. Turn pears up, spoon caramel on top, and add pistachios.
  9. Serve warm with desired toppings.
