Ingredients
  

  • 150 g granulated sugar
  • 113 g light corn syrup
  • 80 ml water
  • 50 g chopped pecans
  • 14 g butter
  • 2 tsp vanilla extract
  • 2 tsp baking soda
  • 1 pinch sea salt

Method
 

  1. Line a baking sheet or large plate with parchment paper. Measure all ingredients before starting.
  2. Combine sugar, corn syrup, and water in a saucepan over medium heat. Stir until dissolved and bubbling.
  3. Stop stirring and cook for 6 to 8 minutes until golden brown.
  4. Remove from heat and quickly stir in butter, vanilla, and baking soda.
  5. Stir in pecans immediately.
  6. Pour onto prepared surface and spread thin.
  7. Sprinkle with sea salt.
  8. Cool for 15 to 20 minutes, then break into pieces.

Make sure to work quickly when mixing in the pecans and pouring onto the surface to ensure a perfect texture.
