  • 180 g all-purpose flour
  • 1 tsp ground cinnamon
  • 0.5 tsp ground ginger
  • 0.5 tsp ground cardamom
  • 0.5 tsp ground nutmeg
  • 2 tsp baking powder
  • 2 large eggs
  • 115 g unsalted butter melted
  • 240 ml sourdough discard
  • 100 g granulated sugar
  • 1 tsp vanilla extract
  • 2.5 medium apples peeled and thinly sliced
  • 40 g chopped walnuts
  • 45 g old-fashioned rolled oats
  • 60 g all-purpose flour
  • 100 g granulated sugar
  • 90 g cold unsalted butter
  • 4 large egg yolks
  • 100 g granulated sugar
  • 240 ml milk
  • 1 tsp vanilla extract

Equipment

  • 9-inch cake pan

Method
 

  1. Preheat oven to 350°F and grease a 9-inch pan.
  2. Whisk dry ingredients together.
  3. Mix wet ingredients until smooth.
  4. Combine wet and dry mixtures.
  5. Fold in apples and walnuts.
  6. Spread batter into pan.
  7. Prepare streusel and sprinkle on top.
  8. Bake for 50 to 60 minutes until golden.
  9. Whisk custard ingredients and cook until thickened.
  10. Serve cake warm with custard.

Notes

This cake is best served warm with the vanilla custard poured over it. You can also use other nuts or spices based on your preference.
