Ingredients
  

  • 60 g white chocolate chips
  • 30 g unsalted butter
  • 30 g coconut sugar or unrefined cane sugar
  • 1 large egg
  • 24 g white whole-wheat flour or finely ground almond flour
  • 15 g matcha powder
  • 5 ml pure vanilla extract
  • 10 g powdered sugar for dusting

Method
 

  1. Melt the white chocolate chips over gently simmering water until smooth.
  2. Stir in butter until fully combined, then mix in sugar.
  3. Whisk in the egg and vanilla until glossy.
  4. Whisk in flour, then add matcha powder and blend evenly.
  5. Grease and flour two ramekins, divide batter, and freeze 25–30 minutes.
  6. Bake at 400°F for 12–14 minutes until edges are firm.
  7. Rest 8–10 minutes, unmold, and serve warm.

Notes

These lava cakes are best served warm and can be dusted with powdered sugar for an elegant touch.
