Pastry
  • 360 g all-purpose flour
  • 30 g granulated sugar
  • 5 tsp salt
  • 340 g cold salted butter cut into cubes
  • 10 ml apple cider vinegar or white vinegar
  • 120 ml ice-cold water
Filling
  • 1360 g thinly sliced peaches or nectarines
  • 30 g vanilla extract or vanilla bean paste
  • 200 g granulated sugar
  • 30 g cornstarch
  • 1 pinch salt
To Assemble
  • 60 ml maple syrup
  • 30 g coarse sugar
Maple-Candied Pistachios
  • 100 g whole roasted salted pistachios
  • 90 ml maple syrup
  • 1 pinch flaky sea salt

Method
 

  1. Make the pastry by whisking dry ingredients, grating butter, adding liquids, and folding before chilling overnight.
  2. Prepare the filling by mixing sliced peaches, vanilla, sugar, cornstarch, and salt.
  3. Preheat oven, roll dough into a large circle, add filling, fold edges, brush with maple syrup, and sprinkle sugar.
  4. Bake until crust is golden and fruit bubbles, then cool for 30 minutes.
  5. Make maple-candied pistachios by simmering nuts with syrup and salt until glossy.
  6. Serve warm or chilled with cream or ice cream and top with pistachios.

Notes

This galette pairs beautifully with whipped cream or vanilla ice cream. You can also use other fruits like berries for variation.
