Ingredients
  

Crust
  • 226 g unsalted butter softened to room temperature
  • 67 g granulated sugar
  • 50 g light brown sugar lightly packed
  • 5 ml pure vanilla extract
  • 240 g all-purpose flour
  • 4.5 tsp kosher salt
  • 40 g finely chopped walnuts
  • 2 tsp ground cinnamon
Filling
  • 1360 g apples peeled, cored, and cut into 1/4 inch slices
  • 15 ml fresh lemon juice
  • 38 g granulated sugar
  • 3.75 tsp ground cinnamon
  • 1.5 tsp freshly grated nutmeg
  • 28 g unsalted butter
  • 3 g cornstarch

Method
 

  1. Preheat the oven to 375°F. Prepare an 8×8 square baking pan with parchment paper.
  2. For the crust: Beat butter, both sugars, and vanilla until creamy. Whisk flour, salt, cinnamon, and walnuts, and add slowly to the mixture until just combined. Press two-thirds into the pan.
  3. Chill for 20 minutes, then bake 18-20 minutes until golden. Cool.
  4. For the filling: Melt butter, add apples, lemon juice, sugar, cinnamon, and nutmeg. Cook 15 minutes.
  5. Add cornstarch, cook until thickened. Spread over crust.
  6. Crumble remaining dough over apples. Bake 25-30 minutes. Cool, then cut into bars.
