Ingredients
  

  • 113 g unsalted butter melted
  • 112 ml honey
  • 100 g light brown sugar packed
  • 100 g granulated sugar
  • 1 large egg
  • 5 ml vanilla extract
  • 180 g all-purpose flour
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 5 g kosher salt
  • 60 g toasted sesame seeds

Method
 

  1. Toast the sesame seeds in a skillet over medium-low heat until golden brown. Let cool and set aside.
  2. In a small bowl, whisk together flour, salt, baking soda, and baking powder. Set aside.
  3. In a small saucepan over low heat, melt the butter and stir in the honey until mixed.
  4. In a medium bowl, combine brown sugar, granulated sugar, and the melted butter-honey mixture. Mix until smooth, then add the egg and vanilla extract.
  5. Fold the flour mixture into the wet ingredients until just combined. Cover and refrigerate for 3-4 hours or overnight.
  6. Divide the dough into 12 portions, rolling each into a ball.
  7. Roll each dough ball in sesame seeds to coat.
  8. Freeze the sesame-coated dough balls while preheating your oven to 350°F.
  9. Bake on parchment-lined sheets, rotating trays halfway through, for 13-14 minutes until edges are golden.
  10. Allow to cool on trays for 5-10 minutes before transferring to a wire rack.
