Ingredients
  

  • 90 g almond flour or gluten-free flour blend
  • 40 g unsweetened cocoa powder
  • 1.5 tsp baking powder
  • 0.25 tsp salt
  • 30 g chia seeds
  • 75 ml water
  • 130 g sugar
  • 80 ml vegetable oil or melted coconut oil
  • 5 ml vanilla extract
  • 30 ml unsweetened plant-based milk

Method
 

  1. Preheat oven to 350°F and grease pan.
  2. Mix chia seeds with water and let thicken.
  3. Whisk dry ingredients.
  4. Mix wet ingredients including chia mixture.
  5. Combine wet and dry ingredients.
  6. Adjust with plant milk if needed.
  7. Pour into pan.
  8. Bake for 12–14 minutes.
  9. Cool before slicing.

Notes

For a richer flavor, consider adding chocolate chips or topping with a vegan frosting.
